Die ESS-Klasse mit Spitzkohl und Schnittlauchkartoffeln

Zubereitung:
Frikadelle entsprechend der Regenerationsempfehlung regenerieren. Kartoffeln schälen und im Salzwasser abkochen. Den Spitzkohl in Streifen schneiden und waschen. Speck und Zwiebeln in der Pfanne anbraten und den Spitzkohl zugeben und mit Salz und Pfeffer würzen. Die Kartoffeln in der Pfanne mit Butter anschwenken und mit gehackter Petersilie bestreuen.

Pfannenfrikadelle 80 g mit Brokkoli, Bechamelsauce und Salzkartoffeln

Zubereitung:
Pfannenfrikadelle mit Brokkoli, Bechamelsauce und Salzkartoffeln Pfannenfrikadelle entsprechend der Regenerationsempfehlung regenerieren. Den Brokkoli waschen, putzen und in Salzwasser bissfest kochen. Die Kartoffeln schälen und in Salzwasser garen. Die gegarten Kartoffeln abgießen und in Butter schwenken. Mit gehackter Petersilie bestreuen. Die Butter schmelzen und das Mehl darin anschwitzen. Die Milch unter ständigem Rühren hinein geben und einige Minuten köcheln lassen. Die Sauce mit Salz, Pfeffer und Muskatnuss abschmecken.
